The option Quotes of Configuration allows entering the current exchange rate of each currency against the reference currency.

Select the reference currency, which will default to a quote of 1.00, and then enter the quote of the second currency relative to the reference currency.

Now any sale we make with any currency will be calculated according to the exchange rate we have entered.
